Just to know ahead of time, what happens if I were to make the mistake to change something while E&B was preparing the data which will be burnt to the DVD, or I were to change it after the burning has begun?

What do you mean "to change something"? Please, be more specific.

Do you mean the checkboxes "Eject the disc" and "Close the wizard"?
